Ingredients
1 ripe avocado, chopped
1 carrot, sliced
1/2 onion, sliced (you can use more if you wish)
1 green capsicum, sliced
250g cherry tomatos, cut into quarters
200g feta
Directions
1. Put all ingredients together in a bowl and mix well. Store in fridge until ready to serve.
Serve with a lettuce mix and beetroot.
